É um dos doces preferidos do Maridão...!&lt;br /&gt;&lt;br /&gt;Dom Rodrigo&lt;br /&gt;&lt;br /&gt;Ingredientes:&lt;br /&gt;&lt;br /&gt;350 gr. de fios de ovos &lt;br /&gt;550 gr. de açucar &lt;br /&gt;75 gr. de amêndoas, picadas &lt;br /&gt;6 gemas de ovos &lt;br /&gt;canela em pó &lt;br /&gt;1 copo de água &lt;br /&gt;Confecção:&lt;br /&gt;&lt;br /&gt;Leve ao lume num tacho 300g de açucar coberto com água e deixe ferver, em lume brando, até obter uma calda em ponto de bola.&lt;br /&gt;Tire do lume, junte as amêndoas e deixe arrefecer um pouco. &lt;br /&gt;Junte as gemas de ovos e leve ao lume até que engrosse e deite um pouco de canela para aromatizar.&lt;br /&gt;Com o resto do açucar e um pouco de água prepare uma calda em ponto de fio. &lt;br /&gt;Numa frigideira deite uma colher de sopa esta calda e assim que começar a ferver junte 1/10 da porção de fios de ovos; O tempo tem sido pouco e então algo tem sempre de ficar pendente!&lt;br /&gt;Vou publicar uma simples recita, mas deliciosa que encontrei aqui: www.gastronomias.com/doces/dce0747.htm.&lt;br /&gt;&lt;br /&gt;É mesmo muito simples, experimentem!&lt;br /&gt;&lt;br /&gt;Massa da tarte:&lt;br /&gt;1 pacote de bolacha maria&lt;br /&gt;125g de manteiga derretida&lt;br /&gt;&lt;br /&gt;Recheio:&lt;br /&gt;1 lata de leite condensado&lt;br /&gt;raspa e sumo de 2 limões&lt;br /&gt;2 gemas&lt;br /&gt;&lt;br /&gt;Cobertura:&lt;br /&gt;2 claras&lt;br /&gt;2 colheres de sopa de açúcar&lt;br /&gt;&lt;br /&gt;Confecção:&lt;br /&gt;Derreter a manteiga e misturar a bolacha picada. Forrar uma tarteira com a massa obtida. Colocar no frigorífico.&lt;br /&gt;Entretanto fazer o recheio que é só misturar todos os ingredientes.&lt;br /&gt;Colocar por cima da base e levar ao forno (250º) até 10 minutos (não deixar corar).&lt;br /&gt;Enquanto estiver no forno bater as claras em castelo e juntar as colheres de açúcar no fim e umas gotinhas de limão e bater mais um pouco.&lt;br /&gt;Retirar a tarte do forno e espalhar as claras por cima. Entretanto, coloca-se a gelatina de molho cerca de 5 min. Escorre-se e incorpora-se no preparado anterior. Deixa-se arrefecer. Batem-se as gemas com o açucar e leva-se ao lume em banho-maria, por alguns min. Envolve-se a polpa de fruta, batem-se as natas. Adicione o toucinho e o pimento cortados em cubinhos. Deixe apurar em lume brando e junte a farinha de mandioca. Tempere com a salsa picada, sal, pimenta e envolva bem, acrescente as azeitonas descaroçadas em fatias.Deixe apurar mais um pouquito e está pronto. Vá adicionando um pouco de água para ligar a massa. Reserve. De seguida, pique a cebola e refogue-a no azeite. Junte-lhe os rabanetes e os cogumelos ralados(costumo passar os rabanetes no ralador de cenoura), o milho e os coentros picados. Tempere, salteie por alguns minutos e retire. Ligue o forno a 180º e unte pequenas forminhas com manteiga. Estenda agora a massa sobre uma superfície enfarinhada e corte em círculos( grandes para forrar e mais pequenos para tapar).Preencha-as com o recheio e tape com o círculo mais pequeno. Retire a polpa aos maracujás e misture-a com metade do leite condensado, leve ao lume e quando começar a ferver, conte um minuto. Retire e dissolva-lhe a gelatina espremida; deixe arrefecer. Bata as natas e envolva-lhes o iogurte, o restante leite condensado e a baunilha. Adicione-lhe o preparado de maracujá e misture bem. Passe pequenas formas(individuais) por água escorra-as bem e preencha-as com o preperado anterior. Leve ao frigorífico até solidificar. Deixe marinar (+-) 1 hora. Coloque o azite numa cataplana e leve ao lume até aquecer. Acrescente os pedaços de carne e deixe-os corar. Adicione a cebola, cortada em meia-luas, os pimentos em tiras e o raminho de salsa. Regue com a marinada, feche a cataplana e deixe estufar em lume brando, durante 30 min. Envolva as amêijoas muito bem lavadas, deixe que abram e polvilhe com os coentros picados. Rectifique os temperos e sirva. Deixa-se tomar gosto cerca de 30min. Entretanto, lavam-se os cogumelos e cortam-se aos quartos. Escorra-os bem. Leva-se o azeite ao lume e, quando estiver quente, colocam-se os cogumelos. Tempere-os com sal e deixe saltear. Junte-lhes então, o miolo de camarão e deixa-se cozinhar mais alguns minutos. Entretanto, esmagam-se ligeiramente os alhos e acrescenta-se ao preparado anterior agitando para ligar o molho. Envolver a farinha misturada com o côco e por fim o óleo. Limpe os pedacinhos de maçã retirados e misture com o açucar e um pouco de manteiga. Recheie as maçãs e coloque-as num tabuleiro untado com manteiga. Deite vinho do porto por cima ( também pode colocar um pouquito de mel) e asse-as no forno, até ficarem macias e douradas, regando várias vezes com o líquido que vão soltando. Polvilhe com a canela, adicione a farinha aos poucos, misturando-a sem bater. Deite a massa num tabuleiro untado com manteiga e polvilhado com farinha. Leve ao forno pré-aquecido a 180º ( +/-) 35 minutos. Bata as gemas com o açucar e, sem parar de bater, adicione aos poucos o mel e o azeite. Junte a farinha misturada com o fermento e a canela, alternando com as claras em castelo. Misture tudo delicadamente, sem bater. Deite a massa numa forma untada com a banha e polvilhada com a farinha. Leve a forno moderado, pré-aquecido. Passados 45 minutos, verifique se o bolo está cozido. Barre os biscoitos com as gemas batidas e polvilhe-os com açucar. Deita-se o preparado na forma e leva-se a cozer em lume médio ou pouco mais, e vai-se verificando a cozedura, quando estiver cozido desenforma-se e rega-se com o leite a ferver adoçado com açucar a gosto, cerca de meio litro. De seguida, leve o leite ao lume, com o pau de canela, até ferver.Numa tigela, misture o açucar com a maisena e as gemas. Verta o leite em fio e mexendo sempre, sobre o preparado anterior. Leve-o ao lume brando, não parando de mexer, até engrossar. Junte-lhe agora os cubinhos de frutos e verta o doce para uma travessa. Deixe arrefecer.
